This soup is SO easy and satisfying. We love everything Lindsay at Pinch of Yum makes, but this amazing coconut soup bursting with chili lime flavor really stole our hearts.

Tuscan Bean Soup w/ Butternut Squash & Red Pepper

This one's slightly sweet from the butternut squash, a bit savory from kale and earthy herbs, and has a nice warm heat from healing spices like ginger, paprika, and red pepper flakes.

Finish with peppery True Tuscan EVOO


Vegan/Vegetarian options in the notes

This soup is a staple in our house when no one feels like cooking dinner. It comes together in about 30 minutes using ingredients you likely already have on hand. Spicy sausage and a chicken bone broth build rich flavor, white beans add creaminess, and a generous helping of greens and a drizzle of True Tuscan give you a boost of nutrients without a ton of effort.

Potato Leek Soup

Leeks have started appearing at markets, which means it's time for one of our favorite comfort foods: Potato Leek Soup! 
This soup is like a hug in a mug, and because it's calorie-dense, it's great to take in a thermos for outdoor adventures. For a lighter version, we like to ladle the soup over sautéed greens.
